The almond tree and its edible nut and seed are native to southwestern Asia. There are two types of seed or nut– sweet and bitter almonds. Sweet almonds are commonly eaten as a nut (roasted, raw, or blanched) and used in cooking, baking, and confections. Almond flavored tea is very popular too. In addition and from a botanical perspective, many people tend to consider almonds to be nuts which are actually closer in relationship to peach pits. Almonds being the fruits of deciduous trees, they were originally native to Asia, the Near East, and North Africa. A deciduous tree is one where its leaves fall off of it at maturity each and every year during the cold or dry season. Unlike a peach pit or stone, fleshy pulp does not grow around the almond’s seed. Instead, almonds develop a rather leather-like coating around them inside of their shell. The actual almond pit or nut is hard and dark-skinned similar to that of a freestone peach pit.

As a word of caution, bitter almonds do contain cyanogenic glycosides in the seeds, bark, and leaves; if these are eaten in large quantities, they can cause convulsions and death.


Almond Oil:


This oil, from sweet and bitter almond, is widely used for its penetrating, reconstructive, and moisturizing properties as an essential massage oil, cream, and during aromatherapy because of its high concentration of oleic and linoleic fatty acids.


Almond Extract:


The nutty and enhancing flavor of almond extract is generally used in baked goods, candies, cream sauces, etc. Pure or “natural” almond extract ingredients include the dissolving of essential almond oil in an alcohol and water base.


Almond Meal:


Almond meal and flour derives from skinless, blanched almonds that have been coarsely ground to make meal and finely ground to make flour. This process will vary between processors.
